What I'm Eating This Week, Live the Life, Kristi Approved Meal Plan

I'm on week two of the Kristi Approved Meal Plan.  You can get a sample here if you sign up for the 7 Day Challenge.  It's totally free to sign up for the 7 Day Challenge too, and since I extended the Live the Life Phase 1 Give Away to this Sunday you still have time to enter!


Meal #1.
1 scoop protein powder, I use vanilla
1/2 cup frozen blueberries
1/2 cup water
6 ice cubes
1/4 cup Fiber One cereal
Blend. Eat. Enjoy. (sorry about the picture, I drank most of it before I remembered! doh)

Meal #2. 
1 egg and 2 egg whites scrambled
1 cup frozen peppers and onions
Thaw the peppers in a colander under warm water.  Heat the pan with some Pam cooking spray, add the peppers, cook until warm and add the eggs.  Scramble.
1 pear core removed and cut into sections. 
I added some green Tabasco to my eggs, but you add some salsa if you wanted.


Meal #3.  Chocolate!!!
1 South Beach meal replacement bar
1/2 a fruit.  I choose 4 strawberries. 
Week one was apples, bananas and grapefruit.  I didn't feel like repeating any of these.


Meal#4.
1 cup green beans.  I buy frozen, they last longer than fresh.
2 oz chicken breast
1/4 cup black beans
1/3 cup barley
2 tb Stubbs bbq sauce
It actually calls for broccoli, but the plan lets you substitute, and green beans were allowed.  This is one of my favorite meals on the plan so far.  I love bbq sauce.


Meal #5.  Cheese!
1 wedge of any flavor of Laughing Cow Cheese
16 low fat Wheat Thins
1/2 cup shelled edamame beans.
I love cheese, and this is the first week it's been on the plan, so I am very happy!


Meal #6. 
3 oz chicken breast
2 tb brown rice
2 tb pinto beans
1 tb corn
chopped romaine lettuce and baby spinach
cucumber, onions and bell pepper
2 tb salsa
You could use black beans, but I already have them in  Meal #4, so I opted for pinto.  Fat free sour cream is allowed too, but I had my share last week, and I really don't like it.  So no fat free sour cream for me.


 I know all the meals look and sound really small, they are.  This is a really healthy way to eat, 6 small meals every day.  I haven't had any hunger pains.  The program does allow for extra meals too, if you are still hungry, but I haven't needed any.  I could eat out of boredom, but who couldn't?  The also have an entire section so substitutions, and each week has it's on section.  If you don't like a meal, or an ingredient, it's not hard to find a replacement.

I'm not a "large meal" girl at all- give me ten snacks a day and I'm a happy camper. Makes my tummy happy too!

This was a trip down memory lane because my parents had that same Corel green flowered plate - they must have been really popular!

I tend to eat three large meals, that works for me, but glad this is working for you! :D
